Chewy Pâte de fruits

When you've endured the snowiest and numbingly coldest winter of your life, thoughts drift to citrus fruits. Meyer Lemons, blood oranges, tangerines, oranges, grapefruit, and kumquats come to mind. Their scent romances, and I think of hot noon hours below grapefruits trees in my mother's garden, peeling rinds lazily and sweating in the sweet breeze.

We sometimes make pâte de fruits in my chocolate shop. One chewy bite, and you are under that orange tree. We make these with grapefruit, oranges, and lemons. Here is the recipe. Please let me know if you try it as I plan to put this in my cookbook. Recipe is under recipe section.
